Nigerian Black Eyed Pea Salad (Saladu Nebbe)

Serves 8.

Ingredients:
1/4 C lime juice
1 C roughly chopped parsley
1 C veg oil
5 C cooked black-eyed peas
10 gr onions, thinly sliced


1 red bell, finely chopped
1 tomato, seeded and finely chopped
1 cuke, seeded and finely chopped
1 habenero, minced
salt and pepper to taste

Method: Whisk the lime juice and parsley in a L bowl. While whisking, drizzle in the veg oil to make a smooth dressing. Add the black-eyed peas, gr onions, bell pepper, tomato, cuke and chile. Season with salt and pepper and set aside for at least one hour or overnight. Serve chilled or at room temp.
