Method: Whisk the lime juice and parsley in a L bowl. While whisking, drizzle in the veg oil to make a smooth dressing. Add the black-eyed peas, gr onions, bell pepper, tomato, cuke and chile. Season with salt and pepper and set aside for at least one hour or overnight. Serve chilled or at room temp. |
