Cranberry Oatmeal Cookies

Makes 3-4 dozen

Ingredients:
3/4 C unsalted butter, room temp
1 1/2 C brown sugar
2 t cinnamon
1/4 t ground ginger
1/4 t nutmeg
1/2 t baking powder
1/2 t baking soda
1/2 t salt


1 T vanilla extract
1 L egg
1 1/3 C oats
1 1/4 C whole wheat flour
2 C dried fruit: cranberries, diced apples, dates, raisins and/or apricots
1 C pecans, chopped

Method: Preheat the oven to 350 F. Cover one or two baking sheets with parchment paper. Cream the butter, sugar, spices, b powder, soda, salt and vanilla. Beat in the egg. Combine the oats, flour, fruit and pecans and stir into the butter mixture. Drop the dough by heaping T onto the baking sheet. Bake for 7 min then reverse the pans on the racks and bake for another 7-8 until, until beginning to brown around the edges but soft at the center. Remove from the oven and let sit in the pan for 2 min. Cool on a rack.
