Soft Cheese Borek

Serves 6-8.

Ingredients:
7 oz feta
7 oz farmer's cheese
1/2 to 3/4 C finely chopped dill
1 stick butter, melted and cooled


2 1/4 C milk, warmed
4 eggs, lightly beaten
14 sheets fillo
7 oz kasseri or strong white cheddar, grated

Method: Preheat the oven to 350F. Blend the feta, farmer's cheese and dill. Choose a pyrex dish large enough that a fillo sheet can fill it while hanging over the edges slightly. Brush the bottom with a little butter and combine the rest of the butter with the milk and eggs. Lay one sheet of fillo in the dish. Gently brush with a little of the egg mixture and lay another fillow sheet. Pour 1/12 of the egg mixture on the fillo and spread gently without tearing the fillo. Sprinkle 1/6 of the grated cheese. Tear two fillo sheets into strips and lay them on top. Pour 1/6 of the egg mixture on top and gently spread. Sprinkle 1/6 of the grated cheese. Repeat the whole procedure, twice, for a total of 12 fillo sheets. All the grated cheese should be used up. Fold the overhanging fillo over the top and lay a fillo sheet. Gently brush a little egg mixture and lay one last fillo sheet, tucking in the sides. Gently ladle the remaining egg mixture over the top without tearing the fillo. Bake for 30-45 min until golden brown and puffed. Cut into squares and serve hot.
