Paella Fried Rice

Serves 4-5

1/4 C extra virgin olive oil
1 T cumin seeds
1/2 t red pepper flakes
1 L onion, chopped
1 L red bell pepper, chopped
2 Spanish chorizos, quartered lengthwise and cut into
   1/4-inch pieces

4 C cold cooked rice
1 1/2 t salt
10 oz frozen peas
1/3 C hulled, green pumpkin seeds, toasted
1 C fresh cilantro, finely chopped

Heat oil in L skillet over medium heat until almost smoking.  Add cumin and red pepper flakes, stirring until color changes slightly.  Add onion and red pepper and cook, stirring, until softened slightly.  Raise heat to medium high and add chorizo.  Stir 3 minutes.  Add rice and salt, breaking rice into small pieces.  Saute 3 minutes.  Add peas, stirring until just cooked.  Turn off heat and stir in half of pumpkin seeds and cilantro.  Garnish with remaining seeds and cilantro.
