Roti

Makes 8 L roti

Ingredients:
2 to 2 1/2 C atta flour
substitute: half white whole wheat, half bread flour

1 t salt
2 T veg oil, more for brushing
1 C room-temp water

Method: Combine the ingredients and stir. Knead for 10 min until soft but not sticky. Drizzle a little oil over the dough and cover with plastic wrap for 1-2 hours. Divide into 8 pieces and roll each into a ball. Remove one ball, keeping the others covered, flatten and dip into a little flour. Roll out to 7-8" and place in a hot skillet over med-high heat. Cook until there are some brown spots and turn. Brush very lightly with oil. When brown spots form, turn and brush lightly with oil. Turn one or two more times, pressing in the middle, until cooked and blackened in spots. Place on a barely damp towel and cover. Repeat until all the rotis are cooked.
