Roasted Squash Chips

Serves 6

Note: D doesn't really like them, but I do.

Ingredients:
2 lb butternut squash, peeled and cut into 1/2" slices
3T olive oil
2 T butter, melted


4 t fresh lemon or lime juice
salt and pepper, to taste
2 t fresh rosemary, chopped (optional)

Method: Preheat oven to 400F. Toss squash with oil, butter and lemon juice. Arrange in a single layer and sprinkle with salt and pepper. Use two pans if necessary. Cut into wedges if desired. At this point, pan can be set aside for up to 4 hours and reheated at 400F for about 10 min. Adjust seasoning and sprinkle with optional rosemary.
